The variety gives a very strong imprint to the oil: single variety oils are those obtained from olives (100%) of a single variety.

Therefore, they are able to enhance the typicality and identity of the different indigenous varieties thanks to the harmonization of the chemical and organoleptic characteristics linked to the genetic heritage of each variety with the characteristics of the territory in which the same varieties have been inserted and cultivated for centuries.
